Super Simple Valentine's Day Cupcakes
Golden Cupcake Ingredients:
1/2 Pound (2 sticks) unsalted butter at room temperature
2 cups granulated sugar
4 large eggs, yolks and eggs separated, at room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk

What to Do:
1. Preheat the oven to 350 degree Fahrenheit. Insert liners into a medium cupcake pan.
2. In a large bowl cream together the butter and sugar with an electric mixer on medium speed until fluffy, takes about 3 to 5 minutes. Add egg yolks. Beat well. Add the vanilla and mix.
3. In a separate bowl, combine dry ingredients: flour, baking powder, and salt.
4. Add the dry ingredients to creamed mixture, alternating with the milk. Mix well.
5. With clean beaters, beat the egg whites on high speed until stiff peaks form. With a rubber spatula, gently fold the egg whites into the batter. I didn't actually do this, so you don't have to either. The ending result is just as delicious without doing this. I didn't have two mixing bowls available, so I just added the egg whites to the batter without fluffing them first.
6. Fill the cupcake liners one-half to three-quarters full. Speaking from experience, if you put too much in the liners, the cupcakes end up with an unattractive muffin top. Bake for 20-25 minutes or until a toothpick inserted in the center of cupcakes comes out clean. Cool cupcakes in pan. I had to bake the cupcakes for about 30 minutes because I live at a higher altitude. If you live at a higher altitude (like in the mountains), prepare to cook them longer.
Decoration:
Use frosting, sprinkles, and conversation hearts to decorate your cupcakes.

I highly recommend the Pillsbury Light Pink Frosting in Vanilla. It's delicious. The best Wilton Striped Icing, by far, was the pink and purple striped icing, Perfect consistency and best coloring.
Now stuff in your mouth, and you're done! :)
